Emmanuel's Chardonnay comes from plots around the village of Savigny. That's Savigny just outside Lyon (not Beaune), but both Savigny villages are home to great Chardonnay. Emmanuel matures some of the wine in stainless steel and some in old oak barrels which results in a beautifully balanced wine with oak taking the back seat. It's all about the zest pithy citrus fruit
